L'Interpretation Viognier

Grape Variety: 100% Viognier - Pays d’Oc (Protected Geographical Indication).
Viticulture: The grapes were harvested from 15-25 year-old vines. The vines are Guyot- pruned and trained on high wires. The soil is a clay and limestone mix. Sampling from random areas within the vineyard was conducted to ensure the quality and degree of ripeness of the grapes on harvesting.
Harvesting: Carried out when grapes are slightly overripe in mid-September, before day break to conserve all the aroma.
Vinification and Maturing: All the grapes were de-stemmed and cold macerated for 6 to 10 hours. Settling was also cold (9 to 11°C). Fermentation took place at low temperature to best express aromatic potential. Part of the harvest was matured in barrels for a month to ensure roundness and complexity. In January, each vat was tasted and blended to achieve the fine balance desired for L’Interprétation. The wine was bottled in mid-February after a light fining, stabilization and gentle filtration.
Tasting Notes: The finale is cool and fruity with beautiful aromatic length.
Service and Cellaring: Serve at between 14 and 16°C. We recommend drinking it at its best, from now on and over the next two years or so.
