L'Interpretation ;

L'Interpretation Merlot

Grape Variety: 100% Merlot- Pays d’Oc (Protected Geographical Indication)

Viticulture: The grapes were harvested from vines aged between 15 to 25 years old. The vines are pruned using the Guyot system and trained on high wires. The soil type is a mix of clay and limestone.

Harvesting: Carried out in mid September in the early morning to preserve aromas and regional expression.

Vinification and Maturing: The grapes were all destemmed, crushed and fermented in stainless steel tanks. Alcoholic fermentation took on average 9 days with a controlled temperature of 28°C (82°F) maximum. Total time on skins was 28 days. On pressing, free run and pressed juice was blended to tank. After 24 hours the wines were racked to another tank where malolactic fermentation took place. In February each cuvee was tasted and blended to achieve the fine balance desired for L’Interprétation. The wine was bottled in March following a light filtration with no fining.

Tasting Notes: The Merlot L’Interpretation is rich and dark with violet hues. The nose oozes classic Languedoc aromas with plums, berries and spices offering hints of liquorice. On the palate the immediate sensation is of a supple, mellow wine with more plums, chocolate and spice. The finale is long and even, with fine tannins wrapped in dense fruit.

Service and Cellaring: Temperature between 16 and 18°C (60 and 64 °F). We recommend drinking this wine within the next 5 years
