Grape Variety: 95% Syrah, 5% Grenache, AOP Languedoc (Protected Geographical Indication).
Viticulture: The grapes were harvested from 25-30 year-old vines, cultivated to yield 25 Hl/hectare. The soil is poor, filtering in areas of gravelly limestone.
Harvesting: Carried out in the early morning in mid-September to ensure retaining the entire aroma expressed by the particular soil and weather conditions.
Vinification and Maturing: Since harvesting is conducted manually at optimum maturity, the entire bunch can be undergo carbonic maceration. Fermentation is carried out slowly over a period of 20-25 days. Ageing for 18-20 months is carried out in traditional vats under micro-oxygenation.
L’Interprétation Collection Privée Rouge has a rich, dark color with violet highlights. The nose provides aromas of candied blackcurrants enriched with black olives, heightened by a touch of chocolate and truffles. The mouth is full and silky with melted tannins and a beautiful length.
Service and Cellaring: Serve at between 16 and 18°C. We recommend drinking it within the coming 5 to 8 years.
